Three dinners, one grocery list, four servings each. This week: lemon chicken and rice, smoky chicken wraps, and a tomato chickpea skillet. The same peppers, spinach, yogurt and seasonings do different jobs across the three meals.
Review sample. These are original recipe drafts, not kitchen-tested recipes. Cooking times are estimates; use the doneness checks in each recipe. The grocery list covers 12 dinner portions, with no planned cooked leftovers.
Start here
Check the pantry list before shopping.
Plan the two chicken dinners within 1–2 days of buying the chicken, or freeze the later portion promptly. Make the chickpea dinner whenever it fits.
Choose any swaps before shopping. Cook a fresh pot of rice on the two nights that need it.
Cooking for two? Use the two-person quantities below and halve each recipe. Keep the same doneness checks; smaller batches may finish sooner.

Grocery list
Check off anything already at home. Weights in parentheses are approximate conversions unless the package weight is specified.
Produce
4 medium bell peppers, any color
3 medium yellow onions
1 large garlic bulb with at least 9 cloves
10 oz (284 g) baby spinach
4 medium lemons; the recipes need 7 tablespoons of juice and 1 teaspoon of zest in total
Meat and dairy
3 lb (1.36 kg) boneless skinless chicken thighs
One 16 oz (454 g) tub of plain Greek yogurt; use 360 g total, leaving about 94 g
Cans and bakery
Two 15 oz (425 g) cans of chickpeas; weights are before draining
One 14.5 oz (411 g) can of diced tomatoes
8 medium flour tortillas, about 8 inches across
Check the pantry
2 cups dry long-grain white rice (about 370 g)
7 tablespoons olive oil
1 tablespoon dried oregano
1 tablespoon smoked paprika
2 teaspoons ground cumin
2¾ teaspoons fine salt, as the starting seasoning across all three meals
¾ teaspoon black pepper
Optional bottled lemon juice, only if the fresh lemons yield less than the measured total
Water is also needed for rice, the skillet and thinning the sauces. If you buy larger packs, the excess is not included in this plan. Lemon juice yield varies; measure it before cooking and use bottled lemon juice to make up a shortfall if needed.

When unpacking, separate and label the two chicken portions. Keep raw chicken in leakproof containers on the refrigerator’s bottom shelf, away from ready-to-eat food. Refrigerate at 40°F (4°C) or below. Freeze any portion you will not cook within 1–2 days, then thaw it in the refrigerator; allow 1–2 days or longer as needed. USDA chicken handling
Dinner 1 Lemon oregano chicken and rice
Equipment: two rimmed baking sheets, a saucepan with lid, a mixing bowl and a food thermometer.
Ingredients
1½ lb boneless skinless chicken thighs
2 bell peppers, cut into ½-inch strips
1 medium onion, cut into ½-inch wedges
3 garlic cloves, minced
1 cup dry long-grain white rice, plus water as directed on its package
3 oz baby spinach, washed and dried unless labeled ready to eat
120 g plain Greek yogurt, about ½ cup
3 tablespoons lemon juice, divided, plus 1 teaspoon finely grated lemon zest
3 tablespoons olive oil, divided
2 teaspoons dried oregano
1 teaspoon fine salt, divided, and ¼ teaspoon black pepper
Cook
Heat the oven to 425°F (220°C). Start the rice using its package’s water ratio and cooking directions. While it cooks, cut the vegetables and mix the sauce before handling raw chicken.
Mix the yogurt with 1 tablespoon lemon juice, ¼ teaspoon salt and 1–2 tablespoons water, just enough to drizzle. Keep chilled until serving.
Toss the peppers and onion with 1 tablespoon oil and ¼ teaspoon salt on one baking sheet. In a bowl, coat the chicken with the remaining 2 tablespoons oil, 2 tablespoons lemon juice, the zest, garlic, oregano, remaining ½ teaspoon salt and pepper. Arrange the chicken on the other sheet. Keep both trays in single, uncrowded layers.
Roast for approximately 25–35 minutes. Rotate the trays and turn the vegetables halfway through. Begin checking the chicken at 20 minutes; the thickest part of each piece must reach 165°F (74°C). Remove vegetables early if they brown before the chicken is ready. Use temperature, not color or the clock, to judge the chicken.
Divide the rice and spinach among four plates. Add the chicken and vegetables, then spoon over the yogurt sauce. Each plate gets one quarter of the cooked chicken and rice.
Swap: replace the two peppers with 1 lb zucchini, cut into ½-inch half-moons. Roast on a separate tray and check after 15 minutes; remove when tender and lightly browned. The chicken timing and temperature check stay the same.
Dinner 2 Smoky chicken and pepper wraps
Equipment: a large skillet, a plate for the cooked vegetables, a clean plate for cooked chicken, a small bowl and a food thermometer.
Ingredients
1½ lb boneless skinless chicken thighs, cut into ½-inch strips
2 bell peppers and 1 medium onion, thinly sliced
3 garlic cloves, minced
3 oz baby spinach, washed and dried unless labeled ready to eat
8 flour tortillas, about 8 inches across
120 g plain Greek yogurt, about ½ cup
2 tablespoons lemon juice, divided
2 tablespoons olive oil, divided
2 teaspoons smoked paprika and 1 teaspoon ground cumin
1 teaspoon fine salt, divided, and ¼ teaspoon black pepper
Cook
Mix the yogurt with 1 tablespoon lemon juice, ¼ teaspoon salt and 1–2 tablespoons water. Keep chilled. Prepare the vegetables before cutting the chicken, then wash hands and clean the board, knife and surfaces.
Heat 1 tablespoon oil in the skillet over medium-high heat. Add the peppers, onion and ¼ teaspoon salt. Cook for 8–10 minutes, stirring, until softened with browned edges. Move to the vegetable plate.
Season the chicken with the remaining ½ teaspoon salt and the pepper. Cook in two uncrowded batches, using 1½ teaspoons oil per batch, approximately 6–8 minutes each. Turn the strips and check that the thickest pieces reach 165°F (74°C). Transfer each cooked batch to the clean chicken plate.
Lower the heat to medium. Return the vegetables and stir in the garlic, paprika, cumin and 2 tablespoons water for about 30 seconds. Return all the cooked chicken and its collected juices; toss for 1–2 minutes until hot. Remove from the heat and add the remaining tablespoon lemon juice.
Warm the tortillas according to the package. Divide the filling, raw spinach and sauce among eight tortillas, or serve the parts separately for people to assemble. Allow two wraps per person.
Swap: for rice bowls, omit the tortillas and add 1 cup dry rice to the shopping list. Cook it fresh according to the package while making the filling. Divide the rice and all the filling among four bowls.
Dinner 3 Tomato chickpea and spinach skillet
Equipment: a large deep skillet, a saucepan with lid, a colander and a small bowl.
Ingredients
2 cans chickpeas, 15 oz each, drained and rinsed
1 can diced tomatoes, 14.5 oz, with their juice
1 medium onion, finely diced, and 3 garlic cloves, minced
4 oz baby spinach, washed unless labeled ready to eat
1 cup dry long-grain white rice, plus water as directed on its package
120 g plain Greek yogurt, about ½ cup
2 tablespoons lemon juice, divided
2 tablespoons olive oil
1 teaspoon each ground cumin, smoked paprika and dried oregano
¾ teaspoon fine salt, divided, and ¼ teaspoon black pepper
½ cup water, plus 1–2 tablespoons for the sauce
Cook
Start the rice according to its package. Mix the yogurt with 1 tablespoon lemon juice, ¼ teaspoon salt and 1–2 tablespoons water; keep chilled.
Heat the oil in the skillet over medium heat. Add the onion and cook for 5–7 minutes, stirring, until softened. Stir in the garlic, cumin, paprika and oregano for 30 seconds.
Add the chickpeas, tomatoes and their juice, ½ cup water, remaining ½ teaspoon salt and pepper. Bring to a simmer and cook uncovered for about 10 minutes, stirring occasionally. Mash a few chickpeas against the pan to thicken the sauce. Add a splash of water if it gets dry.
Stir in the spinach in handfuls and cook for 2–3 minutes until wilted and hot. Take off the heat and stir in the remaining tablespoon lemon juice. Taste and adjust seasoning if needed.
Divide the rice and skillet mixture among four bowls. Finish with the yogurt sauce.
Swap: use two 15 oz cans of cannellini beans instead of chickpeas. Drain and rinse them, follow the same method and stir gently so they hold their shape.
Two person quantities
Halve quantities in both the ingredient lists and numbered directions, including divided oil, salt and sauce water. Each chicken dinner uses ¾ lb chicken; each rice dinner uses ½ cup dry rice; each sauce uses 60 g yogurt. Keep two wraps per person and follow the rice package’s water ratio.
For all three dinners together, use:
Fresh ingredients: 1½ lb chicken, 2 peppers, 1½ onions, 4½ garlic cloves, 5 oz spinach, 180 g yogurt, 3½ tablespoons lemon juice and ½ teaspoon zest. Two medium lemons are a shopping allowance; measure their juice.
Cans and tortillas: 1 chickpea can, ½ tomato can and 4 tortillas.
Pantry: 1 cup dry rice, 3½ tablespoons oil, 1½ teaspoons each oregano and paprika, 1 teaspoon cumin, 1⅜ teaspoons fine salt and ⅜ teaspoon pepper.
With a 10 oz spinach bag, a 16 oz (454 g) yogurt tub and an eight-tortilla pack, you’ll have 5 oz spinach, about 274 g yogurt and four tortillas left. Buying 2 onions leaves half an onion. The half tomato can is about 7¼ oz (206 g); refrigerate it in a covered container for the package’s stated period or freeze promptly. Buy only 1½ lb chicken if available; freeze any extra promptly.
Storage and leftovers
The dinners do not depend on food cooked on a previous night. Keep the cold yogurt sauce separate from hot leftovers.
Chicken and skillet leftovers: refrigerate promptly in shallow covered containers, within two hours of cooking, or one hour if the temperature is above 90°F (32°C). Use refrigerated leftovers within 3–4 days and reheat to 165°F (74°C). USDA leftover guidance
Rice: if there is extra, chill it quickly, ideally within one hour, in small portions. Refrigerate and use within 24 hours; reheat only once, until steaming hot throughout. Do not leave it cooling in the saucepan or rice cooker. If rice is stored with chicken or chickpeas, use this shorter storage window for the whole container. FSA rice guidance
Uncooked extras: use the remaining yogurt for breakfast within its package’s storage guidance. Keep unused tortillas as the package directs, or freeze them. Refrigerate unused cut lemon in a covered container.
Wash hands after touching raw chicken; do not rinse the chicken. Keep its utensils and juices away from the spinach, sauce and cooked food. USDA chicken handling
Allergens: the base plan contains milk and wheat. Check every product and substitute against your household’s requirements; this plan is not an allergen-free guarantee.
